2 tablespoons olive oil
1 tablespoons chopped fresh sage (about 1 oz.), divided
1/2 cup soft fresh goat cheese
2 teaspoons sliced green onions
1 minced shallot
1/4 teaspoon salt
4 medium heirloom tomatoes
• Heat oil in medium skillet over medium-high heat. Add 3 tablespoons fresh sage and fry for 30 seconds. Using slotted spoon transfer sage to paper towel.
• Combine cheese, onions, shallot, salt and remaining sage in bowl. Season with pepper.
• Using small paring knife, remove cone-shaped piece 2 inches wide by 1 inch deep from top of each tomato. Divide cheese mixture among tomatoes; top with fried sage.
• Prepare grill (charcoal grill works best, but your oven will work in a pinch). Bring grill to medium-high heat (or 375 degrees if using oven). Place tomatoes on grill rack; cover grill with lid. Cook until tomatoes are soft, about 5 minutes.
• Serve as a first course on a bed of arugula or as a side dish with grilled beef or chicken.
