Designated one of France 's top ten chocolatiers , Joel Durand makes luscious creations from Provence 's herbs, fruits and flowers. Having met Joel and become friends with him over my years of travelling through Provence, it is now my honor to have Paradou be his only outlet in the United States.

Joel works almost exclusively with ganaches, the melt-in-your-mouth center of chocolate truffles. He infuses his ganache with over 32 different flavors. These range from the classic to the exotic, from the spice to the herb, from the flower to the fruit: jasmin tea, lavender, cloves and lemon, rosemary, prailine, rose petal, star anise, bitter honey, orange, tiramisu, and many more.

Each square is adorned with a letter or punctuation mark making it easier than ever to say it with chocolate.
